Go Birds!

Today the Eagles have a big game against the Giants.  If you haven't notice, I love my city and our sports teams, but most especially the Eagles and The Phillies.  Now, I don't know if you have heard the rumor about Philly sport team fans, but supposedly we rank high in many people's eyes as the "nastiest pro-sports fans". C'mon!  You can see an article written here, where it describes why we may have the reputation of such.  One incident included a Santa being booed at an Eagles game (whooops!) and another is just titled the "General behavior on the 700 level." HA! You should check it out, but I do apologize for some of my fellow fans' action.

Anyway...in the spirit of the Birds playing today, CK and I decided to make these Bird's nest Eggs adapted from the Holiday Issue of Taste of Home magazine I swiped from my Mom....Here's how they turned out, and let me just add, suppppper easy.

What you need:

-4-6 eggs depending on how many you want to make, each used about 3/4 of an egg
-Bacon (1 1/2 slices for each)
-Shredded cheese blend
-Cooking spray or spray butter (Ck believes there are too many chemicals in PAM)
-splash of milk (optional)
-splash of hot sauce (optional)

How to do it:

Preheat over for 350.  They will cook between 18-20 minutes.  Cook bacon slightly before using at Medium heat for about 2 minutes on each side.  Spray muffin pan with whatever spray you are using and wrap pieces of bacon around each muffin whole.  Whip eggs in small bowl with a splash of milk and hot sauce (or however you usually make your scrambled eggs) and toss the cheese in there too.  Pour egg mixture into muffin pan, filling about half or 2/3 of the muffin spots.  Cook until egg looks solid and let sit for 5 minutes.
